Why meal plan?

Imagine this: you know Thursday is going to be a busy day, maybe it’s going to be full of meetings, or the kids have after school activities and your cat needs to go to the vet. It’s also nearing the end of the week and everyone’s tired. Instead of trying to figure out dinner in between appointments and needing to make an extra stop at the grocery store on your way home from work, you anticipated a busy, tiring day and either tossed something in the slow cooker earlier that morning, or, you grabbed a meal from your freezer you made and froze last week. Either way, when you get home, dinner is ready, all you need to do is change into your comfy clothes and enjoy a healthy, home cooked meal. And if you used the slow cooker, your house probably smells pretty good, too!

In general, meal planning is a helpful practice to ensure healthy, balanced meals throughout the week. It also gives you some structure around your meals and food choices, while leaving some room for when the unexpected pops up. However, I also realize that some weeks, it’s just one more task you need to complete. I’ll help you find a method of meal planning that works for you, using recipes and cookbooks you already have, know and enjoy, and mixing in some new options.


What to Expect

We’ll work together and start small to learn the skills needed to meal plan on a regular basis. The plan we put in place will be personalized to you. We may start by planning a couple of meals per week, or perhaps we jump right in and plan a whole month. Maybe dinners are a piece of cake, but breakfast jams you up (no pun intended). We’ll determine what’s doable for you, so we can set you up for sustainable, long-term success.

“It feels embarrassing to admit, but even with an Italian American family who always seemed to make magic meals, I was never a cook. My 3 kids can attest to the fact that frozen foods were my go to strategy for our dinners and ‘heat it up for 3 minutes’ felt like my personally coined phrase.

Cooking to me seemed to be that thing that ‘only a select few’ people understood. I reached out to Bethany because I was tired of fearing my kitchen and wanted to know how I could make meals that my family could enjoy (despite not having a lot of time to make them)! I wanted my kids to have a few memories of mom making them a special meal.

When I sat down with Bethany, something unexpected happened! I had fun planning out the recipes and figuring out what I wanted to cook! I remember when she sent me the meal plan with the steps on what to do, my kids and I went through it and were so excited to try it out!! Cooking for the first time made sense and was something I was excited about.

Cooking is now something I see as a fun adventure I'm leaning into...one where I don't have to spend hours, but still get to give my kids on occasion those meals that feel like I made it just for them.

These are memories I wouldn't be having if I hadn't worked with Bethany. And while I wouldn't yet declare myself the next Betty Crocker, this momma is making meals that she's proud of!!!!
