Anti-Inflammatory Salad Dressing

Have you ever made the most delicious salad, only to have it fall short because the dressing was just so-so? Like a sauce in any other dish, a dressing can really make or break your salad experience. Instead of reaching for a bottle of store-bought dressing, which is usually full of inflammatory vegetable oils, make a big batch of this and toss it onto any of your favorite salads!

Ingredients

  • 1/4 cup extra-virgin olive oil

  • 2 tbsp acid (apple cider vinegar, red wine vinegar, lemon (lime or orange) juice, balsamic vinegar, rice wine vinegar)

  • 1-2 tbsp mustard (Dijon, spicy, honey mustard)

  • Salt & pepper

  • Spices, optional (ginger, garlic, turmeric, paprika, onion powder, oregano, the choices are endless!)

Instructions

  1. Pour all ingredients into a small bowl or measuring cup; whisk until fully combined.

Note

You can make a bigger batch of this and store it in the fridge. Sometimes this causes the ingredients to separate. Simply let sit at room temperature for a few minutes and remix.
