Everyday Salmon Salad

This is my take on a tuna salad, but with salmon. This comes together in five minutes, and can either be made into a sandwich or wrap, or put on top of a bed of greens. You could also enjoy this as a snack with some carrot sticks & crackers.


Ingredients

  • 1 5oz can wild-caught salmon, drained (you can also used leftover baked salmon)

  • 1 tablespoon mayonnaise (I prefer Primal Kitchen)

  • 1 teaspoon Dijon mustard

  • Squirt of lemon

  • Salt & pepper, to taste

  • Chives, for garnish

Instructions

  1. In a small bowl, mix all ingredients together.

  2. Serve on top of salad greens or as a sandwich or wrap.
