Everyday Salmon Salad
This is my take on a tuna salad, but with salmon. This comes together in five minutes, and can either be made into a sandwich or wrap, or put on top of a bed of greens. You could also enjoy this as a snack with some carrot sticks & crackers.
Ingredients
1 5oz can wild-caught salmon, drained (you can also used leftover baked salmon)
1 tablespoon mayonnaise (I prefer Primal Kitchen)
1 teaspoon Dijon mustard
Squirt of lemon
Salt & pepper, to taste
Chives, for garnish
Instructions
In a small bowl, mix all ingredients together.
Serve on top of salad greens or as a sandwich or wrap.
